Bacon, Egg and Tomato Quesadillas with Avocado

I had a birthday earlier this month and my husband surprised me with a huge breakfast that morning. He had done the shopping on his own and had stored everything in our ice chest in the back room (so cute!). It was so yummy and a great surprise! But, he didn't realize that we already had 18 eggs in our fridge, and he bought another dozen. So, we have a lot of eggs in our house right now that are going bad soon so we're trying to use them up. You'll be seeing quite a few egg recipes here in the next few days. But, eggs are a great, inexpensive protein - you can never have too many egg recipes in my opinion. You can see this recipe here.

Tortillas - $2.58 / 10 at Walmart, used $1.00 coupon - total - $1.58 for 10, used 2 - total - $.32

Eggs - $1.25 / 18 at Smith's, used 2 - total - $.14

Cheddar cheese - On Sale at Smith's for $1.00 / 8 oz, used $1 / 2 coupon - total for 8oz - $.50, used 3 oz - total - $.19

Roma tomato - $.50 / lb at Walmart - total - $.12

Turkey Bacon - used the Biggest Loser Free Jenny-O Turkey product coupon to get it for Free!

Avocado - $.69 at Walmart

Salt and Pepper, Cooking spray, Butter - approximate total - $.25


Grand Total - $1.71 for 2 servings, $.85 each
